Cheese Brine Salt Calculator
Brine needs a constant salinity for the cheese to come out with the same taste and texture. Enter the brine weight and its current and target salinity to find the amount of salt or water. The calculator works by weight percentage.
Salt to add
7.32 kg
The percentage is by weight (kg of salt per 100 kg of brine). Measure salinity after full dissolving and again after an hour; direct measurement is more accurate than calculation.
In Lebnara you record each tank's salinity readings, the software calculates the salt or water, and sends an alert on deviation.
How to use
- Enter the weight of the brine in kilograms.
- Enter the current salinity, or zero if you start from pure water.
- Enter the target salinity and read the amount of salt or water.
Frequently asked questions
- What salinity is right?
- It depends on the cheese type and your recipe. It is best to follow your factory's recipe and measure salinity with an instrument after dissolving.
- Is the calculation by weight or volume?
- By weight. Treat a litre of pure water as about a kilogram, and measure after dissolving because volume changes with salt.
